“Hueso Loco is vibrant, energetic, and full of life,” said owner Edwin Guerrero.

“We want guests to feel comfortable the moment they walk in—like they’re stepping into a place where they can relax, enjoy great food, and have fun. Everyone here genuinely enjoys creating a great experience, and that energy fills the room.”

Before establishing Hueso Loco with the Arellano brothers and a silent partner, Guerrero worked in a variety of restaurant roles to fully familiarize himself with the industry.

“The idea for Hueso Loco had been in my mind for years,” he said. “I’ve spent a decade in the restaurant industry, and I truly started from the bottom—cleaning tables, learning the flow of service, and working my way up through different roles over time. I always wanted to understand every part of what it takes to run a restaurant, so I made it a point to learn from the ground up. Those years taught me not just the operations, but the energy and culture that make a restaurant feel alive. Hueso Loco became the place where I could finally bring all of that experience together.”

Guerrero’s considerable experience and commitment to excellence led to a thoughtful and thorough renovation process to ensure authenticity.

“Renovations were extensive—not because of layout changes, but because we were committed to sourcing materials, décor, and design elements directly from Mexico,” he noted. “That meant waiting for shipments, working with artisans, and making sure every detail reflected the authenticity we wanted. It took time, but the end result is a space that truly feels like Hueso Loco.”

Since opening one year ago, Guerrero says the restaurant’s “rhythm” has evolved in terms of its staff growing stronger and service becoming smoother; but he adds that cuisine offerings have remained consistent because “we’ve focused on perfecting what we do best and keeping our quality consistent.”

In addition to its popular and highly-rated cocktails, Hueso Loco offers a wide variety of fresh, modern, and sometimes surprising dishes to please every palate.

“Our menu focuses on bold flavors and dishes that feel both comforting and exciting,” Guerrero said. “One dish that always surprises people is our Mondo Burger. We’re a Mexican restaurant, but we serve a seriously good burger—juicy, flavorful, and crafted with the same attention to detail as our traditional plates. Of course, everything on the menu deserves a try.”

Guerrero cites Hueso Loco’s Burrito Chile Relleno as his favorite dish and its street tacos, birria tacos, and Calaca—choice of protein on a bed of rice accompanied by queso—as the most popular dishes. He also notes that there are a couple of delicious offerings that customers tend to sleep on and should try on their next visit.

“What are people sleeping on?

The Baja tacos—crispy fish, bright citrus, fresh toppings, and a sauce that ties everything together,” he remarked. “They’re vibrant, balanced, and full of flavor. And the Oaxaca Lava deserves more attention too. It’s a bold, melty, comforting dish with deep, savory flavor—something people don’t expect but always enjoy once they try it.”

The perfect accompaniments to these and other dishes are Hueso Loco’s signature craft cocktails, which feature syrups made in house and 100 percent juices.

“We put a lot of care into our cocktails, and they’ve become part of the fun, interactive experience of dining here,” Guerrero said.

As Hueso Loco continues to be an integral part of downtown Lynchburg’s momentum and to consistently deliver on its philosophy—”Treat people well and serve food that makes them happy”—Guerrero and his team are building toward the future with intention.

“We’re focused on building longevity—creating a place that stays true to its identity while continuing to evolve in meaningful ways,” he said. “We’re taking our time to make sure everything we introduce fits the spirit of Hueso Loco. There’s always something in the works—you’ll just have to stay tuned.”
